Apple Snack Cake
This moist, flavorful cake has less fat than most treats and is nice with a sprinkle of confectioners' sugar or a dollop of fat-free whipped topping.
Makes 8 servings
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup margarine
1/4 cup packed brown sugar
1/2 cup molasses
1/2 cup unsweetened applesauce
1/2 cup low-fat buttermilk
1/2 cup egg substitute
1 teaspoon vanilla
1/2 cup raisins
orange rind
Directions
1. Preheat oven to 350 F. Lightly spray an 8-inch, square baking pan with nonstick cooking spray; set aside.
2. In a small bowl, stir together the flour, ginger, baking powder and baking soda.
3. In a large bowl, using an electric mixer, beat together the margarine and sugar until blended. Add the molasses, applesauce, buttermilk, egg substitute and vanilla; beat on low speed until just blended. Stir in the flour mixture by hand until thoroughly combined. Fold in the raisins and orange rind. Pour the batter into the prepared pan.
4. Bake for 30 to 35 minutes, or until a cake tester inserted in the center of the cake comes out dry. Transfer the pan to a wire rack to cool.
